CARABACCIA restaurant
Renovating a traditional trattoria means upgrading a space rooted in local tradition while ensuring compliance with regulations, customer comfort and the owner’s vision.
The planned interventions led to the creation of new spacious dining rooms and additional seating areas. The management’s goal was to redistribute the existing tables and chairs, reaching a total of 70 seats to ensure greater comfort for guests and more efficient service operations.
The kitchen area was relocated to a new space, allowing the creation of dedicated areas for food storage, cooking separated from the washing area, meat preparation, fish preparation, salad washing, cold dish preparation and dishwashing.
The bar area was relocated to the newly expanded spaces, featuring a fully equipped bar counter and refrigerated display cases for the presentation of cold dishes.
New restroom facilities were created and the basement areas were fully renovated to include a wine cellar for wine display, a staff changing room and a storage room.
